#1 Babi Guling

Also known as Suckling Pig, this has got to be Bali’s most famous authentic dish. The meat of a young pig is marinated with turmeric and Balinese herbs and spices, before being roasted over a pit of open fire containing coconut husks and wood. You’ll enjoy the sliced tender and aromatic meat, along with crispy pork skin, pork satay, pork soup, rice, vegetables, pork crackers, and sambal. Not for small eaters!

 

#2 Lawar

Another genuine Balinese dish, the Lawar is usually chopped pork meat (sometimes duck, chicken, beef or goat) mixed with vegetables and grated coconut. The original version of this dish uses fresh blood mixed with the meat and eaten just so. This version is called Lawar Merah – however, you can always ask for the non-bloody version, called Lawar Putih.

 

#3 Satay Lilit

This is a favorite amongst all and it doesn’t require an adventurous soul to enjoy! The Satay is a delicious option for those who like grilled chicken, fish, pork or goat meat.  It is marinated in coconut milk, Balinese herbs, and spices and then wrapped around sticks before being cooked over hot coals. Spicy, savory and sweet, you can enjoy the Satay by itself, with peanut sauce or with white rice.

 

#4 Bebek Betutu

A dish originally created for royalty, a whole duck is marinated and stuffed with a plethora of Balinese herbs including salt, garlic, shallots, ginger, peanuts, lemongrass, and chilies.  It is then wrapped in banana leaves and steamed in its own juices for eight hours in a clay pot. This is the secret that ensures the tender, flavourful nature of this sophisticated dish. You should also consider trying the chicken version.
